Basic Homemade Pasta Recipe

Prep time: Min. 70 min
Cook time: 4 min.
2 cups flour
1/2 tsp. sea salt
3 farm fresh eggs

combine the flour and the salt  (1/2 tsp salt)
Make a well in the center of the flour and add the eggs

Gently begin to mix the eggs, gradually drawing in flour with each stroke.
Knead the pasta dough 8-10 min.

Cover the well kneaded dough  with plastic wrap and let rest at least 45 min.
Go for a drive, or something.

After the resting period divide pasta into quarters/ ya I removed one before I thought to take a picture.
Roll the dough through the pasta machine,you need to make several passes.
 Start with the largest setting ( I start on 9)run it through once or twice.and adjust setting each pass.

boil water then cook 3-4 min.
serve with home made sauces, olive oil Parmesan or Lobster if it is a Maine Holiday
