This Week On The Menu

June 28th 55 degrees , cold wet yuk!
Sunrise 5:48 Sunset 8:18 Days Length 14 hrs 30 min. loosing daylight.
All the boys are in the barn and it is time for chili and American Sniper.

Monday: Beef Pot Roast Potatoes Carrots and Gravy
Tuesday: Spaghetti with Fresh Bread Crumbs, Garlic Broccoli and Extra Virgin Olive oil
Wednesday: Hummus Feta and Cucumber Mediterranean Salad
Thursday: Cheese Burgers Fried Egg and Home Fries
Friday: Fish and Home Made Fries

Two Great Meals and One Effort

Mexican Pasta Salad with Black Beans
for tomorrows rain day lunch

Chicken Taco salad with Corn Chips
tonights movie and dinner



So I just grilled up two chicken breast covered in taco seasoning, and five ear of corn.



For the Chicken Taco Salad
Crush up some corn chips and place in a salad bowl.
Top with lettuce, onion , tomato , corn and cheese and the chicken.
Dressing is:

Mix 1 cup salsa and 1 cup sour cream and chopped up olives for each salad dish 
(the taco chicken and the pasta salad)



For the Pasta Salad
Boil Up Some Pasta
add corn, onion and tomatoes, black beans, dressing  top with green onion.

Summer Begins

Most people know today Sunday June 21 st. is Fathers day, this year it also happens to be first day of summer.
 The sun rise started at 5:46 am, sunset will be at 8: 15.
Days length 14 hrs. 29 min.
 This is my favorite time of year for menu writing and cooking, with so many great local choices.
It is already week 3 for our garden csa deliveries. this week we got:
Kale
Swiss Chard
Lettuce
Spinach
Broccoli
Chinese Cabbage
and Dill


My one lone cucumber plant is only just starting to sprout , but at the farmers market this week pickle cucumbers we 1.00$ a pound so refrigerator pickles are in the works.

Saturday: Cheese burgers on the grill, topped with fried egg
Sunday: Sweet and sour chicken
Monday: Spinach and kale Ravioli Grilled garlic pizza
Tuesday: Seared Salmon
Wednesday: Miso Chicken
Thursday: Lamb Rissotto

Saturday: Date Night
On Saturday we took some time off the farm for a much needed Date night,

Tuesday: Seared Cod Fish

Wednesday:Chicken Meat Balls

Thursday: Steak and Potato

My very dear friend Linda lost her husband this week. 
Today I cut some purple Iris, transplant from Linda's home in Ma. many years ago.
Each time I walk by these beautiful Iris over the next couple of days,
 I plan to pray for Linda and Bill and their girls.

There is allot of new life on the farm:
Wild Maine blue berries, just sprouting.
