First's


Over the week end we traveled to Camden , Maine
 to take part in Maine Farmers Draft and Mule Club plow. 
The weather was PERFECT , clear , nice breeze no bugs.

Thirteen teams of horses and a single =27 horses.
Not every one hitched and plowed , but what a nice group of people.

this was the first time hauling the horses this far from the farm.


Another first this week , I was gifted some local moose meat.
A customers daughter hunted moose this year , and brought me in some sample's. This is what we will be making: Moose Burgers

For this recipe, you’ll need:
3 pounds ground moose meat
¼ cup minced garlic
¼ cup soy sauce
½ cup honey
2 tablespoons garlic powder
3 tablespoons onion powder
1 ½ teaspoons chili powder
2 tablespoons canola oil

Preheat your over to 350 degrees F.

First, stir together minced garlic, soy sauce, and honey in a small saucepan. After they are thoroughly mixed, add in the powders. Bring this mixture to a simmer over medium-high heat before reducing heat to medium-low and letting it cook at a low simmer for 15 minutes. Set aside.

If you are making meatballs, roll the ground moose into meatballs in portions equivalent to about 2 tablespoons. This recipe should make about 48 meatballs. Next, heat the canola oil in a large skillet over medium-high heat. Cook the meatballs in batches until browned and cooked through.
Once your meat has drained, put your meatballs or patties into a baking dish. Pour the sauce over your meat and make sure it’s well coated. Bake the meat for about 20 minutes so it absorbs the sauce.
If you are making burgers, put meat into patties and cook on the grill or as desired. For some amazing topping choices, go classic with BLT, or try avocado, onion rings, mushrooms. Try an alfredo sauce dressing – delicious!

Chicken Kebabs with Tandoori Spices

Had a real nice time on Sunday , however enough with the spring rain. Feeling tired , penned up and FAT!
Tread mill is still broken , so plan to start walking and a diet  on Monday.
Been looking for some "diet" menu ideas . This will be on the menu Monday.


Tender pieces of chicken marinated in yogurt and Indian spices make a delicious easy weeknight meal. Dress a simple salad of sliced cucumbers and red onion with oil and vinegar, and serve the kebabs with steamed basmati rice and naan or another flatbread warmed briefly on the grill.



Chicken Kebabs with Tandoori Spices

Ingredients

  • 3/4 cup  plain low-fat yogurt
  • 1 Tbs. fresh lemon juice
  • 1 garlic clove, minced
  • 2 Tbs. paprika
  • 1 tsp. ground cumin
  • 1 tsp ground coriander
  • 1/2 tsp. ground ginger
  • 1/2 tsp. salt
  • 1/4 tsp. cayenne pepper
  • 1 1/2 lb. boneless, skinless chicken breast halves, cut into 1 1/2-inch (4-cm) pieces
  • Vegetable oil for the grill
Directions

1. In a bowl large enough to hold the chicken, mix the yogurt with the lemon juice, garlic, paprika, cumin, coriander, ginger, salt and cayenne. Add the chicken and stir to coat. Cover and chill for 30 minutes.

2. Preheat a medium-hot fire in a grill and oil the grill rack. Divide the chicken pieces equally among 4 or 5 flat metal skewers. Grill, turning once, until cooked through, about 9 minutes total. Push chicken from skewers onto plates and serve immediately.
