63 Eggs A Week
So we have 10 chickens, and have been getting 9 eggs each day.
I fry one up each day for , Fred the basset hound.
Each Monday I hard boil a dozen for egg salad, some times I make a Quiche.
Crustless Spinach Quiche
3 ounces cream cheese, softened
1 cup milk
1 cup eggs (3-6)
1/4 teaspoon pepper
3 cups cheddar cheese
3 cups spinach, chopped
1 cup broccoli, chopped and blanched
1 small onion, diced
5 fresh mushrooms, sliced
Preheat oven to 350 degrees and spray a 10-inch quiche pan with cooking spray. Beat cream cheese. Add milk, eggs, and pepper, beating until smooth. Stir in cheddar cheese, spinach, broccoli, onion, and mushrooms and pour into the quiche pan. Bake for 45-50 minutes or until a knife inserted near the center comes out clean.
