Iam taking and very much enjoying Gordan Ramsey's cookinng class on line, offered by Master Class. The class includes a printable manual (cook book) that I am enjoying very much. My plan for August is to work at least one lesson plan into each weeks meal. I hope this will help with learning both new techniques and recipes. Menu Week One Aug. 1st- August 7th Sunday: Lobster Raviolis Monday: Flat Bread Pizza Fresh local tomatoes, mozzarella and our own Basil Tuesday: Chicken Fajita from Butcher Box Wednesday:Home Made Fresh Pasta & Meatballs from Mondays meal prep. Thursday: Marinated Chicken Breast and green salad Friday: Mussels and crusty bread Saturday: Butcher Box Beef on the grill Lobster Ravioli Serves 4 Ingredients Instructions For the filling ¼ lb salmon, skin and bones removed 1 egg white Salt Freshly ground black pepper 1 cup cooked lobster meat, shells removed and reserved for sauce (this amount is equal to claw, knuckle, and leg meat from two 1½ lb lobsters or all meat, including tail, from one 1½ lb lobster) 1 tbsp thinly sliced basil Zest and juice of 1 lemon For the stock and sauce Lobster shells 2 tbsp olive oil 1 carrot, diced 1 onion, diced 1 stick celery, diced 1 garlic clove, crushed 1 stick lemongrass, halved and bruised 1 tsp tomato paste 1 tbsp brandy 2 cups veal stock 4 cups chicken stock 1 to 2 tbsp heavy cream For the tomato chutney 4 plum tomatoes Olive oil Salt Freshly ground black pepper 1 tbsp thinly sliced basil For the lemon vinaigrette 1 tbsp lemon juice 4 tbsp extra-virgin olive oil Salt For the ravioli dough 2 cups 00 flour Salt 1 tsp extra-virgin olive oil 4 whole eggs, plus 2 yolks Assembly of ravioli 1 egg yolk, whisked Microgreens (micro basil, micro sorrel, depending on availability), for garnish
