Chile Relleno Casserole
8 oz chopped green chilies
3 cups grated cheese half cheddar and half Monterey Jack
3 cups milk
1 tsp salt
1 cup Bisquick
Grease a 9 x 13 pan.
Layer 1/2 of chilies and cheese in pan.
Mix together eggs, milk, salt and Bisquick
Pour over top of chilies and cheese.
Can be covered with foil and stored in the refrigerator over night.
Remove from refrigerator and bake at 350 degrees for one hour.

Loaded Potato Bacon Soup and Flat Breads in Pizza Oven
Tuesday: Beef Tacos

Thursday Insta Pot Smothered Pork Chops, farm fresh apple sauce
Friday: Lobster rolls and chips
Saturday: Smashed burgers
1/4 cup mayonnaise
2 Tbsp ketchup
1 Tbsp pickle relish sweet pickles
1/2 tsp white vinegar
1 1/2 tsp yellow mustard
1/2 tsp sugar or more if sweeter sauce desired
salt and pepper to taste
Combine all ingredients.
Stir to mix and refrigerate until ready to serve

1 Jalapeño Seeds And Membranes Removed, Finely Diced
4 Plum Tomatoes Roughly Chopped
1 Green Pepper Roughly Chopped
1 Red Bell Pepper Roughly Chopped
1 cup Onion Chopped
12 Large Eggs
¼ cup Cheddar, Monterey Jack
1/4 cup Cilantro Chopped
1 Tbsp Butter
1 Tbsp Olive Oil
¼ cup Half-and-half
2 cups Tortilla Chips roughly broken
In a bowl, whisk together eggs and half half. Salt and pepper eggs, then set aside.
Chop tortillas and set aside
In a large skillet over medium-high heat, melt the olive oil with the butter
Add onions and bell peppers and cook until starting to turn brown/black, about 3 to 4 minutes
Add in diced jalapenos and stir to combine
Add tomatoes to the skillet and stir around, then add tortilla chips stirring gently to combine
Reduce heat and add egg mixture to pan.
Stir gently to cook with the peppers, folding mixture very gently as it cooks
Top with cheese and chopped cilantro, and stir to combine
